Cupcake Number One!!
Ok so I love cupcakes and will share recipes I have tried and tested as well as ones I want to try if – you have any please share.
So cupcake number 1 is …….THE CHOCOLATE CUPCAKE!! Well I had to start with what I find is the most popular!!

THE RECIPE
125g (4 1/2 oz) butter,softened
125g (4 1/2 oz) caster sugar
2 medium eggs
2 tbsp milk
100g (3 1/2 oz) self -raising flour
3 level tbsp cocoa ( tho i always use heaped ones, and i find the Bourneville cocoa to be the best!)

THE METHOD
- preheat the oven 190c, 375f, gas mark 5
- Beat together the butter and sugar in a bowel until light and fluffy. Add the eggs and milk and sift in the flour and cocoa, then beat until the mix is smooth.
- Divide the mix between the cases ( I use the silicone ones!) and bake in the centre of the oven until the cakes have risen and are firm to the touch in the centre. bake for 12 – 15 mins.
- Remove cakes from the oven and transfer them to cooling rack.
Now you can decorate these how ever you like my favorite way is with yummy chocolate butter cream.

CHOCOLATE BUTTER CREAM
175g (6oz) butter, softened
4 level tbsp cocoa
3 tbsp boiling water
350g (12 oz) icing sugar
few drops of vanilla extract
THE METHOD
Beat the butter in a bowl to soften it and add the icing sugar, boiling water and vanilla extract, and beat until very smooth. Remember to make this just before use for optimal yumminess!
